In the Kitchen is where you will find all my recipes and adapted recipes, tried, tested, and eaten.

I have a steadfast favorite breakfast that I turn to on most mornings which tastes as amazing as it is good for you. This breakfast is safe for lactose-intolerant fructose malobsorbers, calming and regulating the stomach to keep things runnings smoothly throughout the day. I find that when I stick to this breakfast on a regular basis, I feel my best and the symptoms of having a sensitive stomach are greatly minimized (with a proper diet throughout the rest of the day, of course!) And for those of you lucky enough not so suffer from any stomach ailments, this recipe is also for you, cos this breakfast is just that damned good!

  • This sounds fantastic, and doesn’t sound complicated enough for a weekday breakfast either. Berries are coming into season here in Melbourne so it’s the best time to use them too!

Thanks so much and yep it’s a super simple breakfast to prepare even on those mornings when you are running a bit late with everything!

  • I have to admit I’ve only recently been introduced to the deliciousness of greek yoghurt + fruit + muesli, but my guts were hating on me for the rest of the day. Once again, you present me with a soy alternative haha. How does soy yoghurt taste?

    • rae

Ah maybe it was due to the lactose? I know that a lot of asians have issues with lactose but soy yogurt definitely solves that problem. The soy yogurt here in Germany is amazing but I was less than impressed with the soy yogurt options in the US when I was there this past early fall and ended up sticking to steal cut oatmeal and quinoa for breakfast.

      • It’s almost definitely the lactose. Most of the time I don’t end up liking the soy alternative to things but I’ll look into what the soy yoghurt here is like!

  • This looks so delicious!

      Thanks, Sophia!

  • This sounds so good! I am really bad at sitting down and eating breakfast but I really should make the effort!

It definitely pays off to start the day right! Hope you can incorporate breakfast into your morning routine!

  • Looks tasty! I’m having something similar right now, overnight oats with fruits and nuts on top. I have a slight lactose intolerance problem too – I can take in small amounts of dairy throughout the day, but if I have say, a glass of milk or a cup of yogurt in one sitting, my stomach will be hating me for the next few days. I haven’t seen vegan options for yogurt around my neighborhood yet, but I’m sure I’ll be able to find it in a Whole Foods or somewhere in Manhattan. Is Mandelmuss something exclusive to Germany? I’ve tried googling it but I didn’t find any results in English, haha. It looks like a nut butter, but I can’t be certain!

Overnight oats sound delicious as well and I am so sorry to hear about your slight lactose intolerance! Dairy is quite hard for many people to digest. I did find soy yogurt in Whole Foods when I was in the US last, but I had to admit that I was less than impressed with the flavor and consistency. The options here in Germany seriously look and almost taste like actual yogurt and the texture is spot on – seriously texture is so important! And YES! Haha so many things here I have only first discovered or learnt about IN German so I was not sure how to translate Mandelmuss or what we would call it in English but it is basically directly translated “Almond Sauce” which I am pretty sure must be nut butter! but specifically made with almonds. It is a great way to add some extra protein to a vegan meal!

  • Ooh, I had to google Mandelmuss – looks great! Breakfast biscuits totally fulfil my sugar cravings with this one!

  • Oh wow this looks so good. I’ve never heard of breakfast biscuits or Mandelmus. It looks like almond paste? I’m going to have to figure out how I can try this in the US. (:

    • rae

I think that may be a suitable translation for Mandelmus – it’s basically a bit like peanut butter but with almonds! And not sure if you can get breakfast biscuits in the US but crumbling any kind of breakfast bar inside would work well too!

  • Ahh this looks to good to even eat! I am such a fan of breakfast bowls because they’re quick to put together if you’re in a pinch and obviously very healthy too!
